Why a restaurant owner stays essential in the age of AI
- Tasting a sauce and deciding it needs salt is something no machine does for you.
- In the middle of a rush, it is the owner who reorganises floor and kitchen in seconds.
- Hygiene and the alcohol served are the operator's legal responsibility, not software's.
Is it for you? Five signs
- You love hosting and pleasing people.
- You can stay on your feet all day.
- You stay calm when everything comes at once.
- You enjoy figures as much as cooking.
- You dream of running your own place.

How to become a restaurant owner
In France, no diploma is required to open a restaurant, but several legal duties apply. To serve alcohol, the operator takes the operating permit course (permis d'exploitation): 20 hours over at least three days, valid for 10 years. The licence is declared to the town hall at least 15 days before opening. The team must include at least one person trained for 14 hours in food hygiene, unless a recognised diploma or experience applies. Many owners first gain experience through a cookery qualification or years working in kitchens or front of house. In English-speaking countries, similar food hygiene and licensing rules exist, set locally. The G-Learn trial is a first step to see if the job suits you: its certificate is not a diploma and replaces neither the operating permit nor hygiene training.
Pay
Pay varies widely by region and status. A self-employed restaurant owner's income depends on the business's result after food costs, wages, rent and loans. The first months are often lean: the sector remains fragile, with about 9,468 insolvencies among French cafés, hotels and restaurants in 2025, according to GHR (Altares data). A cautious forecast, reviewed by an accountant or a chamber of commerce, helps estimate what the business could pay you.
The hard parts
- Very long days: two services a day, evenings, weekends and bank holidays, when everyone else is off.
- Constant financial pressure: the cost of produce, energy and staff, with cash flow to watch week after week.
- The operator's legal responsibility for hygiene, alcohol and the safety of premises open to the public, with inspections at any time.

Frequently asked questions
Can you become a restaurant owner at 40?
Yes, many owners start as a career change. It is wise to work in a restaurant for several months first, then build a cautious forecast before opening or buying a business. Experience from another job, in management, sales or team leading, is a real asset for handling the figures and the staff.
Do you need a diploma to open a restaurant?
Not in France. You do need the operating permit to serve alcohol and at least one person on the team trained for 14 hours in hygiene. Rules differ in other countries. A cookery qualification or front-of-house experience is still very useful to be credible with the team and the bank.
How much does a restaurant owner earn?
It depends entirely on the restaurant's results. There is no fixed salary: the owner is paid from what remains after all costs, often very little in the first year.
What is included in the restaurant owner course?
A 13-page PDF guide that covers the whole job, and a 3-level path of 13 five-minute lessons (beginner, intermediate, expert), each with a quick quiz, plus a certificate of completion per level.
Is the course available in English and French?
Yes. You choose English or French at checkout; the Complete Pack includes both languages.
How do I receive the course?
Immediately after payment you receive a download link by email, with your invoice. The files are A4 PDFs you can read on any device or print.
Is the certificate an official qualification?
No. G-Learn certificates confirm you completed the course. They are not a state diploma or a licence to practise.
Can I get a refund?
Yes: if the course is not what you expected, ask within 14 days of purchase for a full refund. Prices start at €6.90.
